Black Bean Cheese Burger


50g of black beans (rinsed, boiled, and drained)

100g cottage cheese

100g boiled potato (grated)

⅓ cup dried breadcrumbs

⅓ cup finely chopped red bell pepper

¼ cup chopped Italian parsley

1 teaspoon minced ginger

2 slices of cheddar cheese

salt and pepper to taste

2 hamburger buns,

shredded lettuce, tomato, and avocado slices


In a medium bowl, mash about half the beans into a coarse texture. Mix in the potato and the rest of the beans. Add in the cottage cheese, breadcrumbs, red pepper, parsley, chopped ginger, salt and pepper. Gently work the mixture together by hand until it holds together. Shape into ¾-inch-thick patties.

Place two spoons of oil in a shallow pan and preheat to medium.

Toast the burger buns and set aside.

Cook the patties until browned on the outside and heated through to the centre. Place a cheese slice on top of the patty and allow to melt slightly. Serve on buns, topped with your choice of fresh veggies and condiments.
